Super Bowl Snacks, Part I: Stuffed with Mayonnaise

So it’s the Ravens vs. the 49s — or HarBowl, as some are calling it.  Now the question is, what are you going to bring to the Superbowl party?  Here are a few humble suggestions…

Mom-In-Law’s Artichoke Dip

This recipe is low-effort and it tastes great!  (Hopefully it’s not “secret,” because here I am posting it on the internet…)

  • 1 8 oz. block of cream cheese, softened
  • 1 cup mayonnaise
  • 1 14 oz. can artichoke hearts, drained and chopped
  • 2 scallions, diced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • hot sauce
  • Worcestershire sauce
  • salt and pepper

Preheat oven to 350.  Combine ingredients in a large bowl, then transfer to pie dish and bake 30-40 minutes.  Serve with crackers, tortilla chips, or sliced French bread.

Stuffed Mushrooms a la Jessie

This stuffed mushroom recipe was a hit at Christmas and I think it would go over well at a Superbowl party, although it involves more effort on the cook’s part than the artichoke dip.  I adapted it from a recipe on AllRecipes.com, but the changes make it way better… So here ya go!

  • 24-28 large stuffing mushrooms
  • 2 tablespoons olive oil
  • 5 cloves garlic, diced
  • 2 Italian sausages, casings removed
  • 1 (8 oz.) block cream cheese, softened
  • 1/2 cup Parmesan cheese
  • 1 cup mayonnaise
  • 1/2 cup bread crumbs
  • black pepper
  • red pepper

Preheat oven to 350 degrees. Clean mushrooms and carefully break off stems. Chop stems into small pieces, discarding tough ends. Arrange mushroom caps on a greased cookie sheet.

Heat oil in a large skillet over medium heat. Add garlic, chopped mushroom stems, and sausage to the skillet.  Fry until sausage is cooked and then remove from heat.

Combine sausage mixture, cream cheese, Parmesan cheese, mayonnaise, and bread crumbs in a large bowl, stirring well.  Fill each mushroom cap with stuffing. Sprinkle with black and red pepper.  Bake for 25-30 minutes.
